Because the cold air coming from the fridge will slowly dry the cake, but when you freeze it, tiny ice particles form inside the cake pieces. Take a plastic wrap and use it to seal off the cake. Then wrap the entire cake in a plastic wrap too. This does two things. One, it keeps the cool drying air from drying out the cake.
